Quinoa Breakfast Muffins

A satisfying way to start the day!
  • 4 eggs
  • 1 cup cooked quinoa (about ½ cup raw quinoa)
  • 1 ½ cups of chopped vegetable (tomatoes, squash, peppers)
  • Salt and pepper to taste
  • Optional add-ins before cooking: shredded cheese, roasted chillis
  • Optional toppings after cooking: hot sauce, Greek cream cheese
  1. Preheat oven to 350 degrees and line muffin pan with muffin liners
  2. Chop vegetables into small pieces
  3. In a bowl, beat eggs and then add quinoa and vegetables, stir until well combined
  4. Divide egg mixture into 6 muffin cups
  5. Bake for 20mins, or until cooked through. To test, insert toothpick into center of muffin - when it comes out dry, then muffin is ready.
  6. Serve immediately (1 serving = 3 muffins)
