Quinoa Breakfast Muffins

- 4 eggs
- 1 cup cooked quinoa (about ½ cup raw quinoa)
- 1 ½ cups of chopped vegetable (tomatoes, squash, peppers)
- Salt and pepper to taste
- Optional add-ins before cooking: shredded cheese, roasted chillis
- Optional toppings after cooking: hot sauce, Greek cream cheese
- Preheat oven to 350 degrees and line muffin pan with muffin liners
- Chop vegetables into small pieces
- In a bowl, beat eggs and then add quinoa and vegetables, stir until well combined
- Divide egg mixture into 6 muffin cups
- Bake for 20mins, or until cooked through. To test, insert toothpick into center of muffin - when it comes out dry, then muffin is ready.
- Serve immediately (1 serving = 3 muffins)
