Simple Chicken Cacciatore

A simple and quick version of a tasty classic
  • 1 cup chopped bell pepper
  • ½ cup chopped onion
  • 1 cup sliced mushrooms
  • 1 cup assorted vegetables (carrot, brussel sprouts, etc)
  • 1.5T olive oil
  • 15oz can low sodium diced or crushed tomatoes
  • 4oz low sodium tomato sauce
  • ¼ tsp dried basil
  • 1 chopped garlic clove
  • 1 pound boneless skinless chicken breast
  1. Warm pan on medium heat, then add oil
  2. Sauté pepper, onions, mushrooms, garlic and other vegetables until soft
  3. Add chicken, brown on each side for 1-2 minutes
  4. Add canned tomatoes, tomato sauce, dried basil, cover and bring to a boil
  5. Turn heat down to low and cook for 15-20 minutes, until chicken reaches 165 degrees.
  6. If desired, serve with 100% whole wheat pasta.
