Cucumber Yogurt Dressing

A refreshing and easy to make dressing.
Ingredients
- ½ cup cucumber, chopped
- ⅓ cup plain, 0% Greek yogurt
- 1 tsp. red wine vinegar
- 2 Tbsp. chopped fresh dill
- 2 Tbsp. chopped fresh mint
- ½ cup crumbled feta cheese
Instructions
- Put all the ingredients in a blender or food processor and blend until smooth.
Notes
Recipe makes about 1 cup (16 Tbsp). Once made, it lasts 4 days in the refrigerator.
