Simple Chicken Cacciatore

A simple and quick version of a tasty classic
Ingredients
- 1 cup chopped bell pepper
- ½ cup chopped onion
- 1 cup sliced mushrooms
- 1 cup assorted vegetables (carrot, brussel sprouts, etc)
- 1.5T olive oil
- 15oz can low sodium diced or crushed tomatoes
- 4oz low sodium tomato sauce
- ¼ tsp dried basil
- 1 chopped garlic clove
- 1 pound boneless skinless chicken breast
Instructions
- Warm pan on medium heat, then add oil
- Sauté pepper, onions, mushrooms, garlic and other vegetables until soft
- Add chicken, brown on each side for 1-2 minutes
- Add canned tomatoes, tomato sauce, dried basil, cover and bring to a boil
- Turn heat down to low and cook for 15-20 minutes, until chicken reaches 165 degrees.
- If desired, serve with 100% whole wheat pasta.
